Gilles' favorite hobbies are cooking and baking, so he was
excited to take on the challenge of kicking an old favorite like
lasagna up a few notches.

Gilles' Savory
Lamb Lasagna Recipe:
Makes 4-6 servings
Ingredients:
1 pound Superior
Farms Ground Lamb
1 large shallot,
chopped
2 packages
tomato sauce (marinara)
1 pack of
lasagna sheets (4 sheets)
1 pack frozen
spinach
1 tub of ricotta
2 eggs
1 1/2 pound
piece of
Comté (or Gruyère), grated
salt and pepper to taste
Directions:
Sauté shallot, salt
and pepper in oil. Add ground lamb and cook on high for a
few minutes until browned; add small amount of tomato sauce -
enough to coat meat.
Prep a large oven
dish by spreading a thin layer of tomato sauce at the bottom.
Preheat oven to 375F. Prep spinach by boiling in hot water
until soft. Drain and mix with approximately 1/4 cup tomato
sauce.
Prep the lasagna
sheets by blanching 1 minute in boiling water; drain, cool, and
lay down on a towel to dry.
Whisk together the
ricotta and the 2 eggs. Grate the Comte; set aside.
Assemble the dish by adding a lasagna sheet at the bottom of the
dish (on top of thin layer of sauce). Spread 1/2 of the
ricotta mix and top with spinach/tomato sauce mix and cover with
the second lasagna sheet.
Spread the meat mix
and cover with the third lasagna sheet. Spread the rest of
the ricotta mix and top with tomato sauce. Cover with the
last lasagna sheet and spread the remainder of tomato sauce on
top. Cover with grated cheese.
Bake in the oven for
30 minutes. Finish on broil until cheese is golden brown.
