Tara from Placerville, CA is the fourth winner of our "Lamb Lover's Recipe" submission.  Her butterflied leg of lamb recipe is perfect for a family get-together or summer BBQ.

Tara's Butterflied BBQ Leg of Lamb Recipe:

Looking for a great wine pairing?  Try a delicious Boeger wine, such as their 2006 Boeger Zinfandel.  Order online here.

Have the butcher bone and butterfly a leg of lamb (whole or half, or look for an unseasoned butterflied lamb leg in the meat section) 

Allow ½ lb per person.  A half leg serves 6-8, approximately.

4 large cloves of Garlic crushed and chopped.

4 sprigs of fresh Rosemary de-stemmed and chopped.

2/3 C Grey Poupon Mustard

1/3 C Soy Sauce

¼ C Olive Oil

Cracked Pepper & Coarse Salt

Mix up the marinade by hand (it will be slightly thick) and spread over the lamb, getting it into all the nooks and crannies.  Let stand at least 4 hours.

NOT overnight.

Grill on the barbecue 4" from medium source of heat for approximately 30 minutes, turning once.  Do not be tempted to over cook it, it is wonderful rare.  Thermometer should read 145 degrees for medium rare.
