Mark's Cajun Pan-Broiled
Sirloin Lamb Chops w/Hummus Sauce:
Makes 4 servings
Ingredients:
4 lamb loin
chops, 1” thick
1.5 tablespoon
extra virgin olive oil
1.5 tablespoon
butter
2 clove chopped
fresh garlic
Cajun Seasoning
or equivalent
Cayenne pepper
2 teaspoon lemon
juice
Package of
hummus
Cooking
instructions:
Heat cast iron
skillet until a drop of water evaporates on contact. Sauté
garlic in olive oil and butter until tender. While garlic cooks,
brush lamb chops with a light coating of olive oil. Sprinkle
chops with Cajun seasoning and cayenne pepper. Place chops in
skillet and cook for 3 minutes. Flip chops over and cook for
another 3 minutes, or until desired doneness. Remove chops from
pan and tent with foil to keep them warm and let juices settle.
Add hummus and lemon juice to pan and stir until it reaches the
consistency of sauce (about two minutes). Pour sauce over
chops. Yum!
