Party Perfect Lamb Lollipops

4 servings

Preparation time: 5 minutes

Cook time: 10 minutes

 

8 to 12   trimmed lamb rib (rack) chops

  • You can use a whole lamb rack and "french" it yourself at home!  Follow this link to watch an video on how to "french" a rack of lamb like a professional chef!

  • After you "french" the rack, cut into individual chops.

2     teaspoons olive oil

3     medium sweet potatoes

1/4  cup chicken stock

       sea salt and black pepper to taste

      

For the sauce:

 

1/4  cup cranberry sauce or jelly (holiday leftovers work great!)

1/4  red wine

 

Coat chops in oil and brown in a preheated pan for 2-3 minutes on each side.  Heat the cranberry sauce and wine in a small saucepan or in the microwave until runny.  Drizzle over the chops and serve with orange sweet potato mash, steamed sugar snap peas, green beans and carrots.

 

For sweet potato mash:  steam or microwave potatoes until very tender.  Mash together with the chicken stock and season well with sea salt and black pepper.
