Taking an old recipe passed down from her
mom, Denise substituted ground lamb for ho-hum beef. Try it tonight!
Denise's Italian
Eggplant and Lamb Di Maggio Recipe
Ingredients
2 lbs Superior Farms ground lamb
4 cups shredded mozzarella
cheese
6 eggs
2 cups Italian bread crumbs
2 tsp garlic powder
2 tsp pepper
2 medium size eggplant
2 jars of marinara sauce
1 ½ cups of olive oil
Cooking
instructions
Preheat oven to 350 degrees.
Slice eggplant into very thin slices. Beat all six
eggs into a bowl. Pour bread crumbs on a plate.
Heat ½ cup of olive oil in a frying pan. Dip eggplant
in egg mixture and coat with bread crumbs. Panfry in
olive oil on a very low heat, covered, until eggplant is
cooked (couple mins). If the olive oil darkens replace the
olive oil with another ½ cup. Continue this method
until the all eggplant is cooked.
Cook ground lamb in frying pan;
drain if necessary. Add the garlic powder and pepper.
Add 1 jar of marinara sauce to lamb when lamb is fully
cooked. Layer a small amount of marinara sauce in a
large glass baking pan. Layer eggplant over marinara
sauce. Layer all the ground lamb. Spread 2 cups
of mozzarella cheese and add another layer of eggplant.
Spread the remainder of marinara sauce over eggplant and
spread 2-cups of mozzarella cheese on top.
Put into oven and cook until
mozzarella cheese is melted.
