Rack of Lamb Recipe

Ingredients
- 2 American racks of lamb
- 6 oz. Dijon mustard
- 2 cups Italian bread crumbs
- Salt and pepper to taste
- Fresh parsley
Preparation
Preheat oven to 350
degrees. Cut the racks in half, making four rib servings. Spread
the Dijon mustard evenly over the top of the lamb. Season with the
salt and pepper. Roast in the oven at 350 degrees until medium
rare (interior meat temperature of 150 degrees). Remove from the
oven and pat bread crumbs into the mustard. Return to the oven and
place under the broiler until browned. Garnish with fresh snipped
parsley and serve immediately.
