Leg of Lamb Recipe
(boneless)
8 - 12 Servings
Ingredients
- 1 Lamb Leg
Boneless (4-6 lbs.)
- 2 garlic cloves slivered
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon rosemary
- 2 onions sliced
- 1 carrot peeled, cut in 1/2 pieces
- 2 celery stalks, cut in 1/2 pieces
- 2 tablespoon olive oil
- 1 bay leaf
- 1 cup water
Preparation
Cut slits in the lamb leg, insert slivers
of garlic. Rub leg with salt, pepper and rosemary. In
skillet cook onion, carrot, and celery in olive oil for 5-10
minutes. Place vegetables and bay leaf in shallow roasting
pan. Place lamb leg on top. Roast in preheated 325 degree
oven for 20-25 minutes per pound or until internal temperature reaches
145-150 degrees for medium rare. Remove lamb from oven, cover and
let sit for 15 minutes before serving.
