Stuffed Leg of Lamb Recipe
8-10 Servings
Ingredients
- 1 boneless leg of lamb (4 - 6
pounds)
- 1 teaspoon rosemary
- ½ cup fresh chopped parsley
- ½ teaspoon thyme
- ¼ cup finely chopped onion
- 1 clove garlic, minced
- ¼ teaspoon ginger
- 1 teaspoon salt
- ¼ teaspoon pepper
Preparation
Mix all the
ingredients until blended. Unroll the leg of lamb and spread the
ingredients evenly over the lamb. Reroll and tie or skewer.
Roast at 325 degrees for 20 minutes per pound for rare or 30
minutes per pound for medium. Let stand 10 minutes prior to serving.
