Leg of Lamb Recipe

Ingredients
- 1 American boneless lamb leg
- 2 cloves slivered garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon rosemary
- 2 onions, sliced
- 1 carrot, peeled and cut into ½
inch pieces
- 2 celery stalks, cut into ½
pieces
- 2 tablespoons olive oil
- 1 bay leaf
- 1 cup water
Preparation
Preheat oven to 325
degrees. Cut slits in the lamb leg, insert slivers of garlic. Rub
leg with salt, pepper and rosemary, In skillet, cook onion, carrot
and celery in olive oil for 5 -10 minutes. Place vegetables, water and
bay leaf in a shallow roasting pan; place lamb leg on top.
Roast in oven for 20 -
25 minutes per pound, or until internal temperature reaches 145 -
150 degrees for medium rare. Remove lamb from oven an let sit for
15 minutes before serving.
